It was good, but being a kid I complained, “why we always got to eat the same thing all the time.” Little did I know the LUXURY meal I was having. Back in the day, oxtail was specifically the tail of an ox. Today, it can be the tail of any cattle. It taste like beef, but because of the extra fat, gelatin, and so on, oxtails produce an incredibly rich stock or stew and the meat, when stewed, has a better texture than most parts of the cattle.   To braise is to fry lightly and then stew slowly in a closed container. That is exactly what was done. Braised Jerk Pork Ribs INGREDIENTS 1 cup flour Salt and freshly ground black pepper 4 ounces oil 3 pounds spare ribs, cut into bones 1 onion, chopped 2 cloves garlic, minced 2 ounces red wine vinegar PREPARATION Preheat oven to 375 degrees F. Season ribs with flour with salt and pepper and dust ribs with it. Knock off any remaining flour and heat up oil. Brown ribs in oil and set aside. An irresistible super simple dish that only takes 30mins to make. IngredientsSauce 1/2 cup light brown sugar 1/4 cup water 1/4 cup ketchup 1/4 cup light corn syrup 1/4 cup minced onion 2 tablespoons red wine vinegar 1 teaspoon minced garlic 1 teaspoon lemon juice 1/2 teaspoon salt 1/2 teaspoon crushed red pepper flakes 1/4 teaspoon black pepper 1/8 teaspoon dried thyme 1/8 teaspoon ground allspice Jerk Seasoning 1/2 cup of Nick's Jerk Seasoning Remaining Ingredients olive oil 2 chicken breasts, pounded thin 1 red bell pepper 1 yellow bell pepper 1 pound pizza dough 2-3 cups shredded mozzarelle cheese 4 slices bacon, cooked 1/2 cup thinly sliced onion, yellow or red 1 green onion, sliced Instructions To make sauce, combine all ingredients in a medium saucepan. Jerk Vegan Pizza

IngredientsJerk Seasoning 1/2 cup of Nick's Jerk Seasoning For the Pizza 8 oz. Tempeh 2 Tbsp. Olive oil, divided 1/4 cup of Nick's Jerk Seasoning 1/3 C. Pineapple, chopped 1/4 C. Red onion sliced 1 C. Vegan cheese, I used Follow your heart 16 oz. (1lb) Vegan pizza dough, I used Trader Joe's Instructions Now, heat 1 tablespoon of olive oil in a non stick skillet on medium high. Then crumble the tempeh into the skillet. Break up any large pieces of tempeh so it looks like sausage crumbles.  Brown the tempeh crumbles in the skillet, reducing heat as needed, tossing the crumbles until they are completely brown.
